CABIN COOKING:

Chicken and Ranch Pizza:
Make Mom's Pizza Crust (recipe below) and baking it until browned. Spread ranch dressing like you would pizza sauce. Next add a little Franks Hot Sauce, or any hot sauce you like.  Spread some Mozzarella cheese on top.  Add cooked and shredded chicken that was soaked in 2 Tablespoons of butter and 3/4 cup of hot sauce.  I add huge chunks of tomato fresh from the garden on my side.  Bake at 425 degrees until ready.


Kelly's Perfect Venison Roast
Ingredients:
1 Venison Roast
Inject with a garlic herb butter marinade
Directions: Heat grill to 375 degrees.  Sear each side for 5 minutes.  Put to the side of the grill so it isn't on direct heat for 15 minutes, flip halfway through.  Let stand for a few minutes and slice into medallions.
 
Mom's Famous Pinwheels
 Ingredients:
Mom's Pizza Crust
Ground up roast
chopped peppers and onions
1 can of mushrooms
Directions:  Grind up your leftover roast.  Mix it with chopped mushroom, onion, salt, pepper, and parsley.   Sprinkle over the pizza dough.  Roll up, cut into rolls, and arrange in a dish.   Bake at 425 degrees for about 30 minutes.  Could be more, could be less, just depends on your oven.  I forgot to take a photo, before I dished some of the rolls out.  Smother in gravy and enjoy!  Fast, hearty, and good! 

BONNIE'S BAKING:

Mom's Pizza Crust 
Ingredients:
1 pkg yeast        1 c. warm water
1 t. sugar            1 t. salt   
1 T. olive oil       2 1/2 c. flour                  
 Directions:  Preheat oven to 425 degrees.  Dissolve yeast in warm water.  Stir in ingredients, mix until doughy, and allow to rest 5 minutes.  Roll out.  Put in pizza pan and bake to desired doneness. 

New Orleans French Bread
1 pkg. Yeast         2 T. Sugar
2 1/2 c. Water       1 T. Salt
1 t. Sugar            6 1/2  Flour
Add flour mixture and knead 8 minutes.  Place in greased bowl and let rise 1 1/2 hours.  Turn on floured surface  for 15 minutes.  Knead and shape into 4 small loaves.  Cut four slashes.  Bake 15 minutes at 450 degrees and then 30 minutes at 350 degrees.

 

 


Old-Fashioned Honey Bread
Ingredients:
1 1/2 c. Water                    2T. Sugar
8 oz. cottage cheese           2 pkgs. active dry yeast
1/2 c. honey                       5 c. flour
1/4 c. butter                        3 t. salt
2 c. whole-wheat flour       1 egg
Directions:  Heat water, cottage cheese, honey and 1/4 c. butter until warm.  Combine warm liquid, whole-wheat flour, sugar, yeast, 2 c. flour, salt, and egg in a large bowl.  Beat 2 minutes at medium speed.  By hand stir in enough remaining flour to make a stiff dough.  Knead dough on a well floured surface until smooth.  Place in greased bowl, turn to coat.  Cover, let rise in a warm place until double in size (45-60 minutes).  Punch down and divide into two loaves.  Let rise again for 45-60 minutes.  Bake at 350 degrees for 40-50 minutes, until golden brown and it sounds hollow when tapped.  Remove from pans and brush with honey butter.
 
Blueberry Cream Muffins
Ingredients:
2 eggs              1/2 t. salt
1 c. sugar         1/2 t. baking soda
1/2 c. oil           1 t. baking powder
1/2 t. vanilla      1 c. sour cream
2 c. flour           1 c. blueberries  
Directions:  Beat eggs, and slowly add sugar.  Combine oil and vanilla.  Combine dry ingredients and slowly add to egg mixture.  Add sour cream and gently fold in blueberries.  Bake at 400 degrees for 20 minutes.







Cindy's Rhubarb Cake
Ingredients:
1 1/2 c. brown or white sugar         1/2 c.    butter
2 c.       flour                                    1 t.       baking soda
1 t.       salt                                       1         egg
1 c.     sour milk                              2 c.     rhubarb fresh or frozen
Directions:  Combine all ingredients.  Pour in a greased baking dish. 
Top with:
1/2 c. sugar
3/4 t. cinnamon
Bake at 350 degrees for 35 minutes.  Enjoy. 
Red Velvet Cake
Ingredients:
1 package Red Velvet Cake Mix                           
1 1/4 c. buttermilk                                              
1/4 c. butter                                                       
 2 eggs                                                                   
1 t. vanilla                                               
Directions:  Mix and bake at 350 degrees for 40 minutes.  Enjoy!










 Cream Cheese Frosting
 Ingredients:
1 pkg. Cream Cheese
1/4 c. butter
2 t. milk
1 t. vanilla
4 c. powdered sugar
Directions: Mix
 Blueberry (Service Berry) Pie
Ingredients:
2 1/2 c. fresh berries
1 c. sugar
1/4 c. flour
dash of salt
1 T. lemon juice
2 T. butter
Directions:  Combine berries, sugar, flour, salt, and lemon juice.  Fill pastry-lined pie pan.  Dot with butter and adjust top crust.  Bake at 400 degrees for 50 minutes.  You can add a dash of cinnamon for additional flavor.

Bonnie's Bumble Berry Pie                    
Ingredients:                                                          
2 c. Saskatoons (blueberries will do)                
2 c. Raspberries          
2 c. Rhubarb                                                        
2 c. Strawberries                                                  
4 c. Apples peeled, cored, & sliced                      
1 t. cinnamon                                                     
1/4 t. nutmeg                                                   
dash of salt                                                            
2 T. butter                                                             
2 T. flour                                                      
Directions:  Bake at 350 degrees for 60 minutes














 
Quick Easy Pie Crust
Ingredients:
1 1/2 c. flour
1 t. sugar
1/2 t. salt
1/2 c. vegetable oil
1/4 c. milk
Directions:  Mix together in the pie plate and bake for 30 minutes at 350 degrees.
 
Renee's Fresh Strawberry Pie
Ingredients:
1 c. strawberries mashed
3/4 c. sugar
1 c. water
3 T. cornstarch
Directions:  Combine above ingredients and cook until thick.  Not super thick, but not super thin either. Add 4 cups of fresh or frozen strawberries to the pie crust.  Pour mixture over the berries and refrigerate.
 
 Grandma's Kuchen 
Ingredients: 
Crust:                                                        Filling
1 c. flour                                                   2 eggs          
1/4 c. powdered sugar                              1 c. sugar 
1/4 t. salt                                                  1/4 t. salt
1/2 c. butter                                              3 T.  flour
                                                                 1 c. sour cream
Directions:  Crust should be dough like and pressed into the bottom of the pan.  Arrange sliced apples or peaches on top of the crust.  You may want to soften the apples a bit by boiling them in water.  For the filling mix with mixer until light.  Then pour over the top of the apples.  I sprinkled cinnamon and nutmeg on the top.  Bake at 450 degrees for 10 minutes and 325 degrees for 35 minutes.  Store in the refrigerator.

 

No Bake Granola Balls
Ingredients:
1c. oatmeal
1/2 c. chocolate chips
1/2 c. peanut butter
1/2 c. ground flax seed
1/3 c. honey
1 t. vanilla
 Directions:  Roll into balls and put in the fridge.  
 
Chocolate Cranberry Biscotti                                                                                                        Ingredients:
1/2 c. butter                               2/3 c. sugar
1/3 c. unsweetened cocoa         2 t. baking powder
2 eggs                                       2 c. flour                          1/2 c. chocolate chips              1/2 c. dried cranberries  Directions:  Add sugar, cocoa, and baking powder to whipped butter.  Beat in eggs and add flour.  Mix in chocolate chips and cranberries.  Bake 2 cakes for 20 minutes at 375 degrees and then lower the oven to 325 degrees and bake another 16-20 minutes.  Sit on the bench and dip in your coffee on a warm spring day.

White Cut out Cookies
2/3 c. butter            1 t. soda
1 c. sugar                 1/2 t. salt
1/4 c. milk                1 t. vanilla
2 eggs                     3 c. flour
1/2 t. almond extract
Directions:  Cream butter, sugar, and eggs.  Dissolve soda in milk, vanilla, and almond extract.  Add to sugar mix and add flour and salt.  Chill for 1/2 hour.  Roll out on floured surface.  Cut out cookies.  Bake at 400 degrees, until slightly browned on the edges.  Frost, decorate, and enjoy.

Anne of Green Gables Lemonade
Ingredients:
2 c. water
2 c. sugar
2 c. fresh squeezed lemon juice
1 or 2 T. lemon zest
Directions:  Boil water and sugar for 5 minutes.  After it cools add lemon juice and lemon zest.  for 2 cups of concentrate add 6 cups of water.  You can add 1/2 pureed strawberries or raspberries or 1/2 c. rhubarb syrup.  Sit on the porch and enjoy.

Farmer's Lemonade
Ingredients:
1 1/2 c. lemon juice
16 oz. strawberries pureed
1/2 c. sugar
1 c. cream
6 c. water
lemon slices & ice
Directions:  Stir lemon juice, sugar, and 1 c. water in a pitcher.  Stir until the sugar dissolves.  Add 5 c. water, strawberries and cream.  Sit on the porch and enjoy.
 
Apple Cider
Ingredients:
 4 quarts of apples. 
Boiled 4 quarts of water
4 t. Cream of Tarter
  
Twenty four hours later I looked at what I had.  I boiled the apples in the water they sat in.  Then I pureed the apples.  I poured the water and puree through a strainer.  Then reboiled the juice adding 3/4 cup of brown sugar, 1 t. of cinnamon, 1/2 t. nutmeg, and 1/2 t. of cloves per gallon of cider. 

 

 

CANNING:



Rhubarb Sauce
Ingredients:
5 lbs. chopped rhubarb (mine did double duty as I used it for wine first)
5 c. sugar
2 t. cinnamon
Directions:  Bring to a boil and simmer for 20 minutes.  Fill pint jars (I got 4 pints) and top with prepared canning lids.  Put in a boiling water bath for 10 minutes (20 at my altitude).  Refrigerate after opening.  Works great on ice cream, with cool whip and angel food cake, and 1/2 c. in homemade lemonade.

 
 
 
 
 
Our Best Bites Strawberry Sauce                                   Ingredients:                                                                               
1 pint of Strawberries                                                              
1/3 c. sugar                                                                                     
1 t. almond or vanilla extract
Directions:  Simmer over medium heat for 5 minutes stirring constantly.  Run through a blender until smooth.  Great for pancakes, smoothies, in lemonade, and on ice cream Sundays. 
 
Wild Thimbleberry Jam
Ingredients:
2 quarts of Thimbleberries
2 quarts of sugar
1 1/2 teaspoon pectin
Directions:  Boil until it looks right.  Enjoy  and always share:)


Pickled Cherry Tomatoes
Ingredients:
2 1/4 lb cherry tomatoes
1 t. salt per 4 cup jar
1 t. sugar per 4 cup jar
fresh basil or parsley
5 garlic cloves per jar
Directions:  Prick each tomato with a toothpick.  Pack the tomatoes into a clean dry jar, adding the salt and sugar as you go.  Pack the jars with tomatoes to within 3/4 inches from the top.  Tuck the basil or parsley and garlic among the tomatoes. Rest the lids on the jars, but do not seal.  Stand the jars in the oven at 250 degrees for 45 minutes.  The juice should be simmering. Remove the jars from the oven and seal.  Store in a cool place and use within 6 months.
 
4-H Hot Fudge Sauce  Ingredients:
1/4 c. Cocoa              1/2 c. Sugar
1/2. Light syrup        2 T. Butter
1/4 c. cream or evaporated milk
Directions:  Combine all ingredients in a saucepan and bring to a boil. Boil for 3 minutes, remove from heat and add 1/2 t. vanilla.  Keep in fridge and enjoy on ice cream or banana splits. Goes great with the strawberry sauce recipe I shared in a previous post. I like to use olive oil bottles for storage.

Aunt Pauline's Homemade Vanilla Ice Cream
ingredients:
6 eggs                            3/4 c. sugar
1/4 t. salt                        2 c. whole milk
Directions:  Heat in a saucepan until it thickens and coats a metal spoon with a thin film or 160 degrees.  Put in the freezer immediately.   Keep in freezer for several hours.  Mix in
More Ingredients: 
1 c. sugar  a scant              1/4 c. vanilla
1 pint of cream                  1 pint of half and half
More directions:  Add enough whole milk to the mark on the ice cream maker.  Sorry on my Mom's side they like to keep the directions a bit vague.  After that follow the instructions on the ice cream maker.  If you haven't ever used one before know that it is about a day long project.  Also follow my Mom's advice and have the maker on when you add snow, otherwise it will stick. 
 
World's Easiest Chocolate Ice Cream
Ingredients:
3 cans of sweetened condensed milk
6 cups of whole milk
1 cup of cocoa mixed smooth in  1 cup of water (lumps are very bad)
Directions:  Whisk together and put in the ice cream maker.  Let it do it's thing and eat like a king.

IN THE PANTRY:


 Sour Cream Face Mask
This mask can be done twice a week. “This mask heals, exfoliates, brightens and moisturizes skin. It refines pores, fades acne marks and prevents blemishes from coming up:
Ingredients:
2 T. sour cream
2 T. honey
1 T. apple cider vinegar or lemon juice.
Directions:  Combine above ingredients.  I used an old tabasco sauce jar for storage.  Apply to your cleansed face and leave on for 20 minutes. Rinse with tepid water followed by a cool (not cold) rinse.  Refrigerate leftovers.

Honey/Olive Oil Hair Mask
Ingredients:
1/2 cup Savannah Bee Company honey  
4 tablespoons light olive oil (depending on hair type, use lesser amount for oily hair)
Directions:  Combine above ingredients.  I used a min-wine bottle for storage.  Keep in hair 30 min then wash out with shampoo.

Skin Brightening Toner
Ingredients:
1/2 c. lemon juice
1 c.  water
2/3 c.  witch hazel (can purchase at any drug store)
2 T. alcohol
Directions:  Mix well.  I used an old Watkins Vanilla bottle and the spray top is from a little body spritz bottle I had.  Spray on face daily.

Honey Cinnamon Face Mask
Ingredients:
2 T. honey
1 t. cinnamon
1 t. nutmeg.
Directions: Mix until the consistency of a thick paste. I put it in a little jelly jar.  Apply the mask to your face and let it sit for 30 minutes. Wash it off with warm water, scrubbing softly in circular motion for exfoliation.

Lemon/Olive Oil Body  and Hand Scrub
Ingredients:
1/3 c. olive oil
2/3 c. sugar
1/4 c. lemon juice
2 t. lemon zest
Directions:  Mix it all together in a jar and store in the fridge to keep it fresh (it does have real juice in it). Use it anywhere on your body that needs a little scrub, moisturizer or general healthy glow.  I cannot say enough how much I love this stuff.

Lemon/Chamomile Hair Treatment
Ingredients:
1/2 c. camomile tea (make sure it's 100% chamomile)
 1/2 T. dry Rosemary leaves
 5 t. lemon juice (from the bottle or the real thing)
 1 c. water
Directions;  Mix well and put in a spray bottle.  Just a side note, chamomile and lemon juice will subtly lighten hair - especially if exposed to heat or sun.  Use daily.
