Fresh Strawberry Pie...

I haven't posted a recipe forever.  I really have no excuse.  Since I made it this weekend I thought I'd share one of my favorites.  I got this wonderful strawberry pie recipe from Kelly's mom it was her sister, Renee's.  It is perfect for this hot summer weather.  The Easy Pie Crust was a recipe the Fanger's shared at a 4-H meeting for their demonstration.  Funny how those memories stick with a person.

Easy Pie Crust
1 1/2 c. flour
1 t. sugar
1/2 t. salt
1/2 c. vegetable oil
1/4 c. milk

Mix together in the pie plate and bake for 30 minutes at 350 degrees.

Renee's Fresh Strawberry Pie
mash 1 c. strawberries
3/4 c. sugar
1 c. water
3 T. cornstarch

Combine above ingredients and cook until thick.  Not super thick, but not super thin either.

Add 4 cups of fresh or frozen strawberries to the pie crust.

Pour mixture over the berries and refridgerate.
Once it is set, eat and enjoy.  It is very easy to make and delicious.  Hope you enjoy during these hot summer days.
