Rainy days...

 My husband and I are working towards hail proofing my garden.  We added a beam that runs the length of the garden for my hail netting.  We got it done just before the rain started. Of course, snow and freezing temperatures, not hail, is predicted for this week.  We will see how this goes.  

It has been raining like crazy.  I've been doing puzzles and baking to keep busy.  Our cabin is small, so tiny puzzles work great.  This donut one compliments my coffee cup mini puzzle. 
My niece added to the family cookbook with a great cookie recipe.  I made it this weekend and they turned out perfect. 
Pumpkin Oatmeal DOUBLE Chocolate Chip Cookies
1 cup sugar

1 cup brown sugar
2 cups all purpose flour
1 cup chocolate chips
1/2 cup white chocolate chip
2 cups rolled oats oatmeal
1/2 tsp of ground cinnamon
2 tsp of pumpkin pie spice
1 TB vanilla extract
1/2 tsp salt
1 cup unsalted butter
1 tsp baking soda
1 cup pumpkin puree
1 egg

Preheat oven to 350 degrees. Line a baking sheet with parchment paper, set aside. In a large bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt. Set aside.
Next beat butter, sugar and brown sugar until well creamed together.
Now add in pumpkin, egg and vanilla. Beat until combine well.
Gradually add the dry ingredients to wet ingredients and mix until incorporated. Next, stir in your oats. Mix well. Stir in both the white and dark chocolate chips. Drop cookie dough by the rounded tablespoon on to the prepared baking. sheet. Bake cookies for 14-15 minutes or until cookies are lightly browned. DO NOT OVER COOK. They will seem a little soft but will firm up as they cool. You want to keep the nice, soft texture!

What do you do on rainy days?  No more questions for tonight, as I need to go move my plants to the greenhouse.  There is a freeze warning.  Argh.

  2. Love the row of wheels along the garden bed. The weather is not co-operating here either. 35F here this AM, and supposed to be even cooler tonight. Its back to moving pepper and tomato plants in and out daily.

  4. Every thing looks so pretty and green. The cookies look fantastic. I like that little puzzle too. Did you finish your quilt? We just don't get rain after April very much. I hope you have a lovely week.

  7. Great idea about the hail net. We are cold but sure hope no snow it didn't get out of the 40s today with overcast clouds and rain showers. By Wed wind driven rain my poor gardens.
