We had a quiet Thanksgiving at home. Our meal was the traditional turkey (smoked to perfection), mashed potatoes, gravy, rolls, and stuffing. My husband did a fabulous job smoking the turkey. It was perfect. For once my mashed potatoes turned out pretty good too. Of course, the best part is using the leftover mashed potatoes to make my favorite bread... lefse.
No, I am not Norwegian, but I love lefse. Add some butter, cream, salt and flour. Roll into balls, refrigerate, roll out as thin as possible, lay on a hot griddle until browned, then flip to brown the other side. I can't think of a better treat.
In an attempt to walk off the Thanksgiving feast, Dollor has been getting a lot of runs this weekend.
Lefse isn't the only leftover recipe we have. Turkey, basil, and bacon pizza is a favorite. Turkey pot pie is almost better than the turkey. Almost.
