Whiling the winter away...

Nothing exciting this weekend.  I made an upside-down pineapple cake.  As always, Ella and I went for our weekly jaunt.

This cake is easy peasy.

Pineapple Upside-down Cake

1/4 c. Butter melted
1/3 c. Brown Sugar
1 can of Pineapple (rings, chunks, or shredded)

Melt butter in bottom of a 9x9 pan.  Mix in brown sugar and pineapple.

1 1/3 c. Flour
1 c. Sugar
1/2 t. Salt
1 1/2 t. Baking Powder
1/3 c. Shortening
3/4 c. Milk
1 Egg

Mix flour-egg and pour over the top of the pineapple mixture.  Bake at 350 degrees for 45 minutes.  A refreshing treat.

Ella and I had to work off dessert.  We went for some cold crisp fresh air.  We actually had enough snow to break out the snowshoes.

She is a bit stiff tonight.  Other than that, it was a quick weekend.  I hope you had more excitement.

  2. I love your beautiful Ella. Too bad she can't wear snowshoes! I would find the trails I walk lonely ones if it weren't for my Millie. Pineapple cake is my favorite. I will add your recipe to my favorites and give it a try.

  3. Even less excitement here - nothing happening. Ella looks to be in her element

  4. I've never had a chance to try snowshoes, but several friends have posted pictures, and it looks like so much fun! Probably a work out too, which would be good. But then again, I guess we'd need to have some snow to use them. I've missed a lot on Blogger over the last while, but I'm still here. Glad to see you are too! :)

  5. I would love to have snowshoes! To go tramping out in all of that fresh air. I love your pictures. What a nice view you have. I love pineapple upside down cake. I think I am going to make a berry cobbler with the last of my berries I picked before we moved. It just makes it sound like spring doesn't it? I hope you have a nice week.
